Hi,
i was thinking if i should use the Nissan Leaf BMS / Charger and DC DC Converter. It's quite big so i was wondering if i actually can make use of the chademo feature? Quick charging is a feature that i definately want to have!
I'd like to use the Leaf BMS, too!
If not, what are my options?

The is one Finnish diy ev with Nissan Leaf motor and working chademo charging. If i remember correctly it is possible to use the nissan hardware, but requires some modification and addon piggyback boards to the leaf charger/DC-DC module.
This would actually be really cool if someone would make "bolt-in" circuit boards for using full leaf motor kit and leaf battery, without the leaf itself. That could be possible for the gurus, but I have not skills.

I'm not yet sure whether the ChaDeMo protocol is actually implemented inside the enormous charger or somewhere else. Reason being that I have not found a mating plug on the drive train wire harness to the ChaDeMo inlet. So maybe it's implemented in the BMS or the VCU? Anyone knows?

Damien has CHAdeMO working on Der Panzer with Tesla Gen 2 charger and the New Electric CHAdeMO controller. This development has now merged into Damien's V4 charger controller board. This does not directly support a BMS today but iirc Tom is planning to support this with SimpBMS.
If you're in Europe i wouldn't bother with CHAdeMO today because CCS is the rapid charging standard that is being deployed on the ground. I'd therefore suggest waiting until we make some progress with the Tesla CCS development project and get on with other aspects of your car conversion today.
Obviously, if you're in a hurry you can influence Damien, Johannes, and Tom's (AFAIK) priorities by paying for their time
