I'm buying a second hand electric steering pump from Opel, they are easy to find.

As far as I understand they all have a sensor to stop automatically as mentioned.
But when I search for the second hand pumps online, it is listed as with or without sensor.
They all have the same shape and so on.
This must be false isn't it? As long as the pump looks the same and comes from an Opel Astra G or Zafira A, I should be good right?

I'm not sure what sensor you are referring to. The Opel pumps don't have (or require) any external hardware to run and they stop once the "Ignition On" signal is not present anymore.

Yes, it stops automatically when needed, so there is probably a sensor in there.
The question is, are there any versions of exactly this shape out there that don't have this behavior and require more?
Probably not, I just got confused by the listings with incorrect information on them.
I think it will be fine
